Cupcakes de Reyes/Epiphany cupcakes

Día de Reyes, y vuelvo a “encender el blog”. Espero que hayáis tenido unas fiestas estupendas. Las mías lo han sido, y además peculiares ya  que no hemos tenido ni un copo de nieve en Dinamarca, algo para mi muy extraño ya que todas las navidades que he pasado allí siempre ha nevado. Además tampoco ha hecho un frío exagerado (de lo cual no me quejo J). Lo major de mis fiestas: mi regalo estrella, hecho entre K y su mami: una Kitchen Aid roja!!! Os aseguro que ni me lo imaginaba, así que mi cara de sorpresa fue total!!! Ya está instalada en su “nuevo hogar”, mi cocina, en la que creo que ya no caben más cosas…(bueno, eso pensaba antes de tener la KA y sin embargo ha cabido….vaya si ha cabido!!! ;). Ahora toca adaptar todas mis recetas a mi “super ayundante” así que voy a estar muy entretenida!!!…Y voy con la primera creación del año, que se me ocurrió una tarde en DK y que está pensada específicamente para el día de hoy: cupcakes de Reyes, son especiales porque la base del cupcake es la misma que la del roscón pero sin frutas, básicamente un brioche con sabor a naranja y limon. La receta de la masa es de Cris, y si bien lleva su tiempo por el tema de los levados, (a lo cual yo añadí la dificultad de dar forma a mini-roscones en lugar de hacer uno grande) merece la pena porque el resultado es delicioso!!!

Epiphany Day and I “turn on” the blog again. I hope you have had wonderful holidays. Mine have been, and also peculiar as we have not had a single snowflake in Denmark, which for me it has been strange as all my previous Xmas hols there, there was always snow. It has not been really cold either (and I can NOT complain about that J ). The best about my holidays, my Xmas present, which came from K and his mom: a red Kitchen Aid!!! I could not believe it, so the surprise was huge!!! It is already in its “new home”, my kitchen, in which I do not think there is space for anything else…(well, that is what I thought before having the KA, and I found the perfect place for it! ;). Now I have to adapt all my recipes to my “super assistant” so I am going to be very entertained!!!…About the first recipe of the year, it came to me one afternoon in DK and it is specifically for today: Epiphany Cupcakes. They are special because the cupcake base is the same used for the ring-shaped cake on top, but without the dried fruits. This ring-shaped cake is very typical in Spain, we always have it with the family on the 6th of January, and the ones you buy in shops contain a tiny plastic doll hidden somewhere in the pastry. The person who gets it in his/her piece of cake, it is supposed to have a very good luck for the rest of the year. The recipe I have used is from Cris, and if it is true that it takes quite a long time to make it because of the different risings (and on top of it I added the difficulty of creating mini ring-shaped cakes instead of a big one), it is absolutely worth it because the result is yummy!!!
